This is not meal prep. Meal prep is cooking Sunday's food and eating it by Thursday. Freezer meals are different: one Aldi trip timed to that week's flyer, one afternoon assembling raw ingredients into bags, then cook each one weeks later โ€” thaw overnight, dump in the slow cooker. Let the week's sale proteins decide which bags you build: chicken thighs, ground beef, Italian sausage, whatever the ad has at a low price. Ten dinners, one trip, one afternoon. Then dinner is handled for the next month.

The System in 30 Seconds

Buy the list. Label 10 gallon freezer bags (name, date, cook instructions), divide raw ingredients per the recipes below, squeeze out the air, lay flat, freeze โ€” or portion soups and sauces into Souper Cubes first for perfectly measured blocks. On cooking day: thaw overnight in the fridge, slow cooker on low 4โ€“6 hours, serve over rice, pasta, or in buns. Total active work: about 2 hours, mostly opening cans.

The 10 Bags

  • 1. Chicken tacos. 1.5 lbs chicken thighs + 1 jar salsa + 1 taco seasoning packet. Cook, shred, serve in tortillas.
  • 2. Beef & bean chili. 2 lbs ground beef (browned first โ€” see note below) + 2 cans black beans + 2 cans diced tomatoes + 1 taco seasoning packet.
  • 3. Teriyaki chicken. 1.5 lbs chicken thighs + 1 bottle teriyaki sauce. Serve over rice.
  • 4. Pulled BBQ chicken. 1.5 lbs chicken thighs + 1 bottle BBQ sauce + 1 diced onion. Serve on buns.
  • 5. Meatball subs. 1 bag frozen meatballs + 2 jars marinara. Serve in sub rolls (buy fresh on cooking day).
  • 6. Chicken pot pie filling. 1.5 lbs chicken thighs + 1 bag frozen mixed veg + 2 cans cream of chicken soup. Serve over biscuits (bake fresh on cooking day).
  • 7. Sausage & peppers. 1 lb Italian sausage + 2 bags frozen pepper & onion blend. Serve in buns or over pasta.
  • 8. Beef stew. 1.5 lbs stew meat + 3 cubed potatoes + 2 sliced carrots + 1 diced onion + 2 cans diced tomatoes. Salt and pepper generously.
  • 9. Honey garlic chicken. 1.5 lbs chicken thighs + 1/3 cup honey + 1/4 cup soy sauce + 4 minced garlic cloves. Serve over rice.
  • 10. White chicken chili. 1.5 lbs chicken thighs + 2 cans white beans + 2 cans green chiles + 1 diced onion. Stir in cream cheese after cooking (buy fresh on cooking day).

What Freezes Well (and What Doesn't)

  • Freezes great: raw chicken thighs, beef, sausage, beans, tomatoes, onions, peppers, carrots, potatoes in stew (they'll be soft but fine), sauces, cooked meatballs.
  • Doesn't freeze well โ€” add on cooking day: dairy (cream cheese, sour cream, shredded cheese โ€” they go grainy), fresh herbs, cooked pasta (turns to mush), crispy toppings. That's why bags 5, 6, and 10 call for fresh add-ins at serving time.
  • The ground beef exception: Brown ground beef before bagging. Raw ground beef frozen in a dense block cooks unevenly. Everything else on this list goes in raw.

Label Every Bag Like This

Meal name. Date frozen. Cook instructions. That's it, but do all three โ€” future you won't remember what's in the flat frosty brick.

Example: BEEF STEW โ€” frozen 10/14 โ€” thaw overnight, slow cooker LOW 6 hrs, salt to taste.

Use a permanent marker on the bag before filling (ink won't stick to a frosty bag). Lay bags flat to freeze โ€” they stack like files and thaw twice as fast.

Thaw and Reheat Without Drama

  • Thaw: Move the bag from freezer to fridge the night before (24 hours for these portions). Never thaw on the counter.
  • Cook: Slow cooker on LOW for 4โ€“6 hours is the default for every bag here. In a hurry? Most work in a pressure cooker too โ€” 15 minutes at high pressure for chicken bags, 25 for beef stew.
  • Food safety line: Forgot to thaw? Cook from frozen and add roughly 50% more time. Never thaw on the counter, and never use the WARM setting to cook โ€” food sitting lukewarm for hours is the danger zone.

Why This Beats Sunday Meal Prep

Sunday meal prep gives you four days of leftovers. The freezer system gives you a month of first-night-quality dinners, each cooked fresh on its day. It pairs with the Aldi flyer cycle: when a protein you use โ€” chicken thighs, ground beef โ€” hits a low price in the ad, double those bags and freeze a month of dinners at the lowest price of the season. Same 2-hour investment, ten times the payoff window.
