Cheap Aldi dinner

Black Bean Chili

VegetarianOne-Pot

Black beans, tomatoes, peppers, and onion simmered with chili seasoning for about $1.59 a serving — hearty enough that nobody misses the meat, and cheap enough to make twice a month without noticing. Two cans of beans plus a can each of diced tomatoes and tomato sauce is the whole base, and 25 minutes of simmering is what thickens it. It is a good dinner for a tight grocery week, a meatless Monday, a pot of leftovers that lasts three days, and for anyone cooking for one or two (it halves easily). Cheddar on top, and maybe a spoon of sour cream.

Tips & swaps

  • Add a can of drained corn or a diced sweet potato for a heartier pot.
  • A teaspoon of cocoa powder or a splash of coffee deepens the flavor without tasting like either.
  • Serve over rice, in a baked potato, or on chips as nachos the next day.
  • Freeze in single portions — it keeps three months and reheats in minutes.
