Chicken Noodle Soup
Real chicken noodle soup, made from raw chicken and a pot of broth, for about $2.07 a bowl. Chicken breasts poach in the broth with onion, carrots, and celery, get shredded, and go back in with egg noodles for the last ten minutes — so the broth actually tastes of chicken instead of just salt. Aldi's Chef's Cupboard broth is one of the better budget broths, and two cartons is all the liquid this needs. Forty minutes, one pot, roughly $8.27 for four generous bowls. It is the recipe to make when someone is sick, when the weather turns, or when you want a dinner that costs almost nothing per serving.

Steps
- 1Dice the onion, carrots, and celery.
- 2Place the chicken in a large pot with the broth and the diced vegetables; bring to a boil.
- 3Reduce to a simmer and cook 20 minutes until the chicken is tender and cooked through.
- 4Remove the chicken, shred with two forks, and return to the pot.
- 5Add the egg noodles and simmer 8–10 minutes until tender.
- 6Season with salt and pepper to taste; serve hot with crusty bread.
Tips & swaps
- Thighs give a richer broth; add five minutes to the poaching time.
- Cook the noodles separately if you want leftovers, so they do not drink the broth.
- A parmesan rind or a spoon of concentrated stock deepens the broth if you have either.
- Frozen peas or chopped spinach go in during the last two minutes.
