Cheap Aldi dinner

Italian Sausage & Peppers

PorkClassic

Sausage, peppers, and onions simmered in crushed tomatoes until the kitchen smells like a Sunday, for about $2.37 a serving. Appleton Farms Italian sausage is the anchor, and the peppers and onions soften in the same skillet the sausage browned in, so the sauce picks up everything that stuck to the pan. Serve it in hoagie rolls for the classic version, over rice, or on its own with a piece of bread to mop up. Thirty minutes, one skillet, roughly $9.47 for four generous portions. Make it when you want a dinner that does not need a side dish, and plan for leftovers, because this one tastes better the next day.

Steps

  1. 1Slice the sausage into 1/2-inch rounds; slice the peppers and onions into strips.
  2. 2Heat olive oil in a large skillet over medium-high heat; brown the sausage 4–5 minutes; remove.
  3. 3Add the peppers and onions to the skillet; sauté 8 minutes until softened and beginning to char at the edges.
  4. 4Pour in the crushed tomatoes and return the sausage; simmer 10 minutes until the sauce thickens slightly.
  5. 5Taste and season with salt, pepper, and a pinch of dried oregano.
  6. 6Spoon the mixture into hoagie rolls, or serve over rice or on its own.

Tips & swaps

  • Hot or mild sausage both work — mix them if the table disagrees.
  • A splash of red wine vinegar or a pinch of fennel seed sharpens the sauce.
  • A spoonful of tomato paste deepens the sauce if the canned tomatoes taste thin.
  • Leftovers pile onto a baked potato or into a frittata the next morning.
