Cheap Aldi dinner

Black Bean & Corn Quesadillas

VegetarianValue

The cheapest dinner in this collection that nobody at the table will call a compromise. A can of Pueblo Lindo black beans gets mashed roughly with a fork, then folds into tortillas with sweet corn and Happy Farms Mexican blend, and the whole thing crisps in a dry skillet until the cheese pulls. Total cost is about $5.48 for four servings, so roughly $1.37 a plate — and it is done in 20 minutes with a can, a bag of frozen corn, and no chopping at all. Reach for this on a meatless Monday, the night before payday, or when the kids need to eat five minutes ago. Taco sauce on the side, always.

Steps

  1. 1Drain and rinse the black beans, then mash lightly with a fork leaving some texture.
  2. 2Warm the corn in the microwave 1 minute or fold it into the beans raw.
  3. 3Lay a tortilla flat and spread a quarter of the bean mixture over half of it; top with cheese and fold closed.
  4. 4Heat a dry skillet over medium heat and cook the quesadilla 2–3 minutes per side until golden and the cheese melts.
  5. 5Repeat with the remaining tortillas, keeping finished ones warm in a low oven.
  6. 6Cut into wedges and serve with taco sauce for dipping.

Tips & swaps

  • A diced onion or a spoon of salsa stirred into the bean mash adds flavor without adding cost.
  • Shredded cheddar melts just as well as the Mexican blend.
  • Assemble them ahead and cook to order — each one takes minutes in the pan.
  • Serve with sour cream, or mash an avocado with lime if one is going soft.
