Cheesy Broccoli Rice Casserole
Rice, broccoli, and two cups of cheddar baked into a creamy casserole for about $1.74 a serving, which is hard to beat for something this comforting. The rice cooks first, the broccoli steams until barely tender, and a can of cream of mushroom soup with a splash of milk holds it all together. Fried onions on top are what turn it from a side dish into dinner. It is a good choice for a vegetarian night, for feeding children who are suspicious of green food, and for anyone who wants a dish that reheats well for lunch. Thirty-five minutes, one baking dish.

Steps
- 1Preheat the oven to 350°F. Cook the rice and steam the broccoli until just tender; drain well.
- 2In a bowl, combine the rice, broccoli, soup, milk, and most of the cheddar (reserve some for the top).
- 3Spread into a greased 9x13 baking dish.
- 4Top with the remaining cheddar and the fried onions.
- 5Bake 20 minutes until bubbly and the cheese is melted and golden.
- 6Let rest 5 minutes before serving.
Tips & swaps
- Frozen broccoli florets work and save the chopping — no need to thaw them first.
- Swap the cream of mushroom soup for cream of celery or chicken if that is what is in the cupboard.
- A pinch of nutmeg or a spoon of Dijon in the mix makes the cheese taste sharper.
- Add a drained can of tuna or diced chicken to make it a full one-dish dinner.
