Cheap Aldi dinner

Sausage & Potato Foil Packs

PorkSheet pan

Sausage, potatoes, and green beans roasted together on one sheet pan for about $2.04 a serving — or wrapped in foil packs if you want the camping version with no pan to wash. The potatoes need the 25 minutes, the smoked sausage only needs to heat through and brown, so everything comes out at the same time if you cut the potatoes small. Garlic powder, salt, and pepper are the whole seasoning, and that is genuinely enough when the sausage is doing the flavoring. It is a good dinner for a weeknight, for a crowd, and for a night when you would rather not think. Hot sauce on the side.

Steps

  1. 1Preheat the oven to 400°F. Cut the potatoes into 1/2-inch cubes and trim the green beans.
  2. 2Slice the sausage into 1/2-inch rounds.
  3. 3Toss everything on a sheet pan with the olive oil, garlic powder, salt, and pepper.
  4. 4Spread into an even layer and roast 25 minutes, stirring once, until the potatoes are tender and the sausage is browned.
  5. 5For foil-pack style, divide among 4 foil sheets, seal, and bake 30 minutes instead.
  6. 6Serve hot straight from the pan or pack.

Tips & swaps

  • Any sausage works: smoked, kielbasa, or Italian — adjust the seasoning to match.
  • Sweet potatoes, baby potatoes, or a mixed bag all roast in the same time when cubed.
  • Foil packs bake in 30 minutes and can go straight on a grill.
  • A squeeze of lemon or a splash of vinegar at the end wakes the whole pan up.
