Classic Meatloaf & Mashed Potatoes

Comfort FoodHigh-Protein

A tender, ketchup-glazed meatloaf with buttery mashed potatoes, for about $2.96 a serving — Sunday dinner, any night you have 75 minutes. This is the old-school version: ground beef, egg, breadcrumbs, diced onion, and ketchup inside and out, with real potatoes mashed with butter and milk. The loaf bakes for almost an hour while the potatoes boil and get mashed, so the timing works out with nothing rushed. Good for a house with kids, good for leftovers, and the slices make excellent sandwiches the next day with the ketchup glaze already on them.

Steps

  1. 1Preheat the oven to 375°F. Mix the beef, egg, breadcrumbs, diced onion, and half the ketchup; shape into a loaf in a baking dish.
  2. 2Spread the remaining ketchup over the top and bake 55–60 minutes until 160°F inside.
  3. 3Meanwhile, boil the potatoes until tender, 15–18 minutes; drain.
  4. 4Mash with the butter and milk until creamy; season with salt and pepper.
  5. 5Rest the meatloaf 10 minutes, slice, and serve with the mashed potatoes.

Tips & swaps

  • Ground turkey works but needs a splash of milk in the mix to stay moist.
  • Add a teaspoon of Worcestershire or a spoon of mustard to the glaze.
  • Let the loaf rest ten minutes before slicing, or it crumbles.
  • Yukon Golds mash creamier than russets if you have the choice.
