Philly Cheesesteak Skillet
Seared shaved beef with peppers and onion under melted provolone, piled into toasted hoagie rolls for about $3.40 a serving. Shaved steak is the cut that makes a cheesesteak work — it cooks in three or four minutes, which is faster than any other beef dinner here — and provolone melted over the top in the skillet is what separates a real cheesesteak from a steak sandwich. Twenty minutes, one skillet, six rolls. It is a good Friday dinner, a good game-day dinner, and a good excuse to buy the nicer rolls. Serve with hot peppers or a little mayo if that is your thing.

Steps
- 1Heat oil in a large skillet over medium-high; cook sliced onion and bell pepper 5-6 min until softened; remove to a plate.
- 2In the same skillet, cook the shaved beef 3-4 min, breaking it apart, seasoned with salt and pepper, until browned.
- 3Return peppers and onions to the skillet; toss together.
- 4Lay provolone slices over the top, cover, cook 1-2 min until melted.
- 5Toast the hoagie rolls, pile in the cheesesteak mixture, serve.
Tips & swaps
- Freeze the beef for 20 minutes before slicing if you cannot find pre-shaved steak.
- Bell peppers and onions can be cooked a day ahead and reheated in the pan.
- American or mozzarella melts faster than provolone if you want it gooier.
- Pile it over a baked potato or into a bowl instead of a roll to skip the bread.
