Cheap Aldi Ground Beef Recipes

Ground beef is probably the most flexible thing in my cart. One pound turns into tacos, meatballs, a meatloaf, a pot of soup or a stir-fry, and it cooks fast enough for a weeknight. Aldi carries it in several sizes and blends, so it is easy to find a pack that fits the recipe and the budget. These are the nine ground beef dinners on this site, each written for four people with Aldi brand ingredients and the cost per serving worked out for you.

Most of these recipes use 80/20 ground beef. That fat ratio gives you the most flavor for the money, and for tacos, chili and skillet meals you simply drain off the extra fat after browning. For dishes where the fat stays in, like meatloaf and meatballs, 80/20 keeps everything moist.

Tacos and Tex-Mex

Taco night is the most reliable dinner in our house, and these four recipes keep it from getting boring. Classic beef tacos with all the toppings, walking tacos served right in a bag of chips, a one-pot taco pasta that is basically tacos meets mac and cheese, and a slow cooker taco soup you can start in the morning and forget about until dinner.

They all lean on the same handful of ingredients: ground beef, taco seasoning, cheese, salsa or tomatoes. If you buy those once, you can rotate through all four without the shopping list getting any longer.

Meatballs and meatloaf

These are the Sunday-dinner style recipes that also happen to be cheap. Spaghetti and meatballs is a family favorite for a reason, and the meatballs can be rolled ahead and frozen. There are two meatloaf recipes here: a weeknight version that takes about an hour, and a classic version with a little more time in the oven. Both come with mashed potatoes, so dinner is completely handled.

A tip for both: mix the meat with your hands and stop as soon as everything comes together. Overmixing is what makes meatballs and meatloaf dense and tough.

Lighter ground beef dinners

Ground beef does not always have to mean heavy. Stuffed bell peppers pack beef, rice and tomato sauce into a pepper with a little melted mozzarella on top, so every plate gets a full serving of vegetables. Beef and broccoli stir-fry uses grass-fed ground beef with fresh broccoli, garlic and ginger over rice, and it comes together faster than takeout would show up at the door.

How I save money on ground beef

Buy the bigger pack when the price is right, then portion it. Split it into one-pound bags, press each one flat before freezing, and it will thaw in the fridge overnight or in a bowl of cold water in well under an hour.

Stretch every pound. Adding a can of rinsed black beans, a cup of cooked rice or a handful of diced vegetables to tacos, chili or a skillet dish makes one pound of beef feed more people without anybody noticing. The taco soup and stuffed peppers are already built this way.

Brown it once, use it twice. Cook two pounds with onion on Sunday, use half for tacos that night and save the rest for the taco pasta or soup later in the week. It saves a pan and about fifteen minutes on the second night.

Watch the weekly ad. Ground beef goes on sale regularly, and the planner on our home page will automatically build more of the week around it when it does.

Food safety basics

Cook ground beef to 160°F, and do not go by color alone. Keep raw beef on the bottom shelf of the fridge so it cannot drip onto anything else, and use or freeze it within a day or two of buying it. Leftover cooked beef keeps in the fridge for three to four days.

Prices vary by store and change week to week, so treat the costs on these cards as close estimates and check the shelf price before you check out.
